Light Meals for Hot Summer Nights

Anyone who knows me, knows I love to cook but sometimes, it’s just too darn not. Reminds me of a song . . . Anyhow, here is a recipe for a summer salad that really is a complete meal. It’s quick, it’s easy and it’s delicious.

This a recipe for two but you can make it for as many as you would like.

2 cups chopped romaine lettuce
1 sliced leek (nice alternative to onion)
1/2 cup shredded carrot
1-1/2 cups of your favorite sea food (I use King Crab or Shrimp)
1 medium diced tomato
fresh garlic (as much or as little as you like) slice thin or shred

Toss all ingredients.
Sprinkle generously with Lemon pepper and toss again.
Drizzle Olive Oil
Squeeze 2 Fresh Lemons over the salad. (secret to getting more juice – roll lemons on the counter first)
Toss again.

Just before serving, sprinkle feta cheese and toss again. You can also add croutons if you want a little extra carb in there.
